I'm not exactly sure the difference between the two, besides that one has two DVI ports and the other has one DVI port.

Which one would you buy?

SAPPHIRE FleX 100354FLEX Radeon HD 7870 GHz Edition 2GB 256-bit GDDR5 PCI Express 3.0 x16 HDCP Ready CrossFireX Support Video Card
SAPPHIRE Radeon HD 7870 GHz Edition OC 2GB 256-bit GDDR5 PCI Express 3.0 x16 HDCP Ready CrossFireX Support Video Card (11199-03-20G)

Or do you have another suggestion for the price range of about $250 or less?

UPDATE: Third choice:
GIGABYTE GV-R787OC-2GD Radeon HD 7870 GHz Edition ...

Or do you have another suggestion for the price range of about $250 or less?

That's the differentiating feature of the Flex edition cards (4-way display out of a single card). Apart from that they are exactly the same, get the cheaper one.

The FleX feature enables users to connect low-cost DVI monitors for the first three screens in landscape or portrait mode providing a cost-effective solution for multiscreen gaming or increased productivity in content creation and editing applications. Using the DisplayPort output, the SAPPHIRE HD 7870 FleX supports four screens in Eyefinity, providing additional display options.

To answer your question they are more or less the same card with different display outputs.

I would get this one

GIGABYTE GV-R787OC-2GD Radeon HD 7870 GHz Edition ...

Cheaper card.

Actually it's more expensive.

But I will eventually be hooking up probably up to three screens. None have a displayport input, only dvi/vga/hdmi inputs (on the monitor). Considering this, do you still suggest to the the cheaper one?

I would skip the rebate and spend $5.

You're suggesting this one:
GIGABYTE GV-R787OC-2GD Radeon HD 7870 GHz Edition ...

But the link I have in the OP which is this, is overclocked:
SAPPHIRE Radeon HD 7870 GHz Edition OC 2GB 256-bi...

So which is better, the overclocked one or the one you recommended?

p.s. you're right, it would be less hassle to forget about the $15 rebate and pay a total of $5 more... but I suppose the question here is which is better regarding performance since the price difference is negligent?

Update: The one you suggested has a lot better reviews. I think I will go with that one.

You notice that all 7870 are Ghz editions which are clocked at 1000Mhz already?
So that is just a mere 50Mhz OC on the Sapphire ;)
On top of that the Gigabyte is clocked at 1100Mhz.
