speedfan should do what you want. http://www.almico.com/speedfan.php it has a log feature in options that will write a log for you and also a chart feature.

May be a little late, or already mentioned, but the 754 Newcastle 3400+ is 2.4Ghz 200x12. Not 2.2 as listed.
