I think, as most will have pointed out before on this Forum, that the last thing you want to skimp out on, is the PSU - this is what makes everything else possible; it drives your system.
Look into something that gets good reviews (especially if this is done by OklahomaWolf @ jonnyguru).
The best PSU for the money you can afford to spend on it, is the basis for anything else you might tack on to it :)

what kind of wattage should i be looking to get

I think the wattage you're looking at is just fine - what I'm concerned with is the quality of your PSU.
Perhaps the gurus here at TPU can give you a better insight into the rest of your components, but I'd be more inclined to use a brand name like Seasonic, Antec or Corsair :)
Anything around the 650-750w should suffice nicely for your intended system :)

Very very important

Find a better PSU Good Brands...Some examples of good brands....

Corsair / SeaSonic / (Some) Cooler Master / XFX / PC Power & Cooling / Enermax / (Some) Silverstone / (Some) Antec / (Some but fewer) OCZ

Best brands I have found with my own personal use are Sea Sonic / Corsair / PC Power & Cooling / and Enermax

Although Cooler master is getting better lately and the PSU I currently have from them is bad ass! I love it! If they stay this good... I might change my "Myabe" Vote on them

I would change the PSU and the HDD. A CG for the OS is not the ideal choice.

Your HDD is more of a storage drive than an OS drive. PSU-wise look at Corsair HX750 or XFX 750W BE or something similar. An 850W equivalent of them if you plan to Crossfire later on perhaps. If you are looking a little cheaper, the TX750 or TX850 are OK

I'm assuming you aren't running 3 monitors so go with the 1gb 6950 or a gtx 560 ti. 2gb of ram is useless for a single monitor. For the PSU I'd go with the 630w Rosewill.

Unlocking shader seems possible with the 1GB versions too. but the 2GB versions are more "proven and tested". He is right though, unless the price difference is very small, the 1GB cards are probably more worth it

I have the XFX Black Edition XPS-850W and I have been very happy with it. The XFX XXX Edition P1-650X-CAG9 650W isn't as powerful and it doesn't meet the same standards, but it is overall very similar and you can get it now for $65 after mail-in rebate. You want to make sure the PSU is powerful enough to handle your proposed system (newegg has a psu estimation calculator). Some other specs to consider are the fan type and the efficiency of the PSU. Ball bearing fans are typically very durable, which is obviously important because if the fan burns out your PSU will burn up. Obviously, the higher the efficiency the better.

The 650W XXX XFX PSU sucks ass.. You forgot to say Amps are important...

the XFX BE editions 750 and 850W are great though, equivalent to HX750/850
