mediocre water will match this...don't understand.

Easy to explain, especially from a guy who use to use watercooling but doesn't anymore. EASE OF USE. Water is cumbersome and needs more maintenance. Air is so much easier and it doesn't have pipes that get in the way of, well, everything.
