This is true for reference HD7970, i suppose reference R9 280X are the same on that:
move the bios switch on the card to 2 to load the original bios.

Oh wait it is this one and it is not like reference...

[...] I have an F3 bios so obviously can't flash an F12 bios...[...]
As you say that is quite obvious on their site.
Warning:
Because BIOS flashing is potentially risky, if you do not encounter problems using the current version of BIOS, it is recommended that you not flash the BIOS. To flash the BIOS, do it with caution. Inadequate BIOS flashing may result in system malfunction.

Please note:
You can only update to a VBIOS version of the same series.
If your VBIOS version is:
F1, it can only be updated with VBIOS versions F2-F9.
F10, it can only be updated with VBIOS versions F11-F19.
F20, it can only be updated with VBIOS versions F21-F29.

What to do? Well if it apparently was possible to flash with the wrong bios, it might be very possible to now flash again, but this time with the correct bios.

Good luck.

I tried flashing with their own utility (vga bios) but it wouldn't let me so no harm done. So I'm guessing this is for a revised edition of the card?

the utility supposes to detect your BIOS version. if you have the latest one, it won't do anything.
the difference of BIOS version is mostly because of change on PCB or memory spec
