Yeah, there's your problem
Play the game like your actually there for best effect
I.E If you're going to be a thief, be stealthy as hell about it, blatant theifs get caught out in real life too
By the by, as most of the towns folk go about their business in the day, that's the best time to steal as often they leave their houses open.
Always save before stealing though as sometimes people realise even though no one has seen you.
Personally I don't bother with stealing ( cept grave robbing that's fair game

) the loot you get legitimately is pretty damn good anyway.
If you really want something that someone has in their house when they are there you can always put a bucket on their head as well, blocking their vision means they don't know you stole it

( When I started I robbed a shop keeper blind ( literally in this case) and then sold his own stuff back to him)
