Nice build.
Though, if I were you I would save some money on some of the parts.
-Graphics card: HD4850 will serve you as well as the HD4870. I wouldn't take anything below this from Ati. A Nvidia's 8800GT maybe, but I think the Radeon is worth it. Eventually, when (if ever) you need more power you can always go CrossFire, when the HD4850s are going to be far cheaper and CrossFire even better implemented.
-CPU: Definately IMO a E8400 over the E8500, 3 Ghz vs. 3.16, and you save $20, use them on the cooler. As of Quads don't bother unless you do a lot of rendering: 3DSMax, Maya, Photoshop, etc.
As a side note I have to dissagree with 3870x2. I don't know if you are going to play new games, but 1920x1200 will force you to upgrade your graphics card more often and won't give you a better gaming experience at all. About HD4850x2 NOW or the HD3870x2, hell no!
Keep the money you save for future upgrades.
