So 1920x1200 is 16:10 and 1920x1080 is 16:9. If you do 16:9 on a 16:10 monitor it will either be stretched or have bars. You will need to step down to 1650x1050 or so to retain the 16:10 ratio.

If your native screen resolution is 1920x1200, then you can only lower it to either 1680x1050, 1440x900 or 1280x800. Switching to any other mode (like 1920x1080) WILL add black areas, and there's not that much you can do about that. You cannot programmatically change your screen proportions: if they were made to be 16:10 (which is your case), then this is just how it is. Some games will add black areas on the sides if you pick any resolution mode except for three I mentioned + the default one, some will probably just "stretch" the image just so it "fills" the screen (which is not the best way to do it).
Now, speaking of in-game settings. If your monitor size is something between 24'' - 22'', then stick to 1680x1050, if it's 22'' - 20.5'', then your eyes should be fine with 1440x900. Having a good old 18.5'' model or something like that allows you to drop to 1280x800 without really noticing the blurriness. The only exception is strategic games - the less your resolution is, the less area you see, it's true for most of the titles around (Civilization V, Age Of Empires III, etc).
