What do you guys think? Is the jump to a 580 worth it or am i just being crazy considering it?
Jump to a 580 isn't worth it. Especially since 480's are cheap, you have a PSU that can run them and it will give you better performance.
Do neither, I don't think GTX480 is holding you back in any way.

What resolution do you play games at?
1920X1080 on a 120hz monitor. I know adding a second is just a waste of money but damnit it's what i'm good at.
depends on now u say u got a 120hz monitor, if u r using Nvidia 3D Vision than yeah u should could feel the power if not than they r right not worth it.
120Hz + 1920x1080 + BF3 + 2xGTX480 = Massive win
Otherwise save the cash for next die-shrink.
Kepler can't come fast enough
Run HWBOT Heaven Benchmark (DX11) bench with that single card.
Here are my scores w/ 26k @ 4.2Ghz with Dual GTX480's in SLi.
