If you cannot afford the 295, go with the 285 ~ I find the NVIDIA drivers to currently be superior to the ATI drivers (personal opinion after three years of owning ATI GPU's).

im in exactly the same boat, had 2x4870 in CF now have GTX295 and it is in a completely different echelon, a core i7 system would do one justice... add a little overclocking...

a big +1 for the GTX295 right here.

I always figured ALL X58 boards could run SLi but is it true Intel boards can't? That seems outrageous! Not that I've ever considered buying an Intel board but WTF is up with that?

Yea, not all x58 boards support sli or crossfire at the same time, but I have found it to only be the case on the "cheaper" x58 boards.

Example: MSI X58 PRO, Intel X58

That board doesn't do Sli but it does crossfire.
But that doesn’t matter as long as you know what Gfx card you want, unlike some

True but its nice to not be tied to one or the other. You may be upgrading and you already have an old SLi setup for now (like a pair of 7900 or 8800 or whatever) and you plan on changing to a pair of ATi cards down the road.

Get whatever you need. I'd say just get a GTX 295 if you have too much money and a high resolution screen. If he plays on any non-extreme resolutions and wants to have extra money in his pocket, a GTX 285 will suffice, as will a 4870 x2 (which is a cheaper alternative to a GTX 295 with similiar performance).
