Offical Dev Guys use workstations for rendering and compiling stuff
when the make a game ram and cpu is the immportant stuff since it takes allot of ram cpu power when compiling or rendering or working on map, models, textures, sounds when a game is done its get compress to a reasable size for desktop pc's

even valve hammer when moving around in the editor takes large ammount of cpu power and not gpu

They use farms and clusters of x86 processors. Even if they don't have all the required powerful video-hardware, at best NVidia would have given them working prototypes of G80 in SLI but their "hell of a processor" could be a farm that emulates a Shader Model 4.0 environment, and the GPU itself.

most likly, i dont know what it took to make the G80, but the NV40 was built on 120 Xeon based Sun systems to render the GPU core.
