Since you're going to encode and all that crap an Nvidia setup is actually better since you can relegate the video cards to do that for you therefore speeding up your rendering time considerably.
Aside from that, 560Ti's are beastly little cards --no doubt about it. I had 2 348 core MSI TFII's in my old i7 rig and they are nice. Ran BFBC2 @ 100FPS with 32xAA @ 1080p. No stutter, no anything. Could max just about anything I threw at them with the exception of Witcher 2.
Only drawback is the 1280MB VRAM. I've read that BF3 uses up to about 1400, although I'd really like to see that for myself.
