Corsair and GeIL have been offering 4x1GB kits for a while now. GeIL even has a 4x2GB kit.

Just a random guess : the bank interleaving technology can't cope with 4 RAM modules in a 4ways scheme maybe ? (that would induce too much performances degradation and instabilities ?)

i think it has to do with the fact that the buses are 64 bits wide and one channel is 32 bits wild. so 4 channels would be 128 bits wild and the system bus couldn't handle it.
