P45 is the best Intel chipset. Only get X38/X48 if you are going to do more than a two card setup.
I recommend the P5Q Pro board of course :)

i know my board would work with that (P5K-E) and that the newer version (P5Q series) would too.

My vote goes for those, as i know from firsthand experience (neighbour has P5Q) that they work well with quads and 4 sticks of ram.

asus tends to go

plain/vanilla (P5Q) then a -E model, pro, deluxe, etc.
usually theres little difference, just dont grab the lowest end one - the 2nd/3rd from the bottom usually OC just as good as the top ones, while being a lot cheaper.

can somebody go back to the basics and explain exactly what the difference is between models: p35, p45 (also p43 is a crappy version of p45 right), x38, and x48

To a point, yes. Though I'd argue that p35 and x38 handle memory better, higher speeds with more stability. At least that's been my experience.

p35 is still a good board, everything else in the newer boards does not make much of a difference

unless SLI, or CrossFire

this is what ive found out so far, x38 and x48 are useless unless you have a crossfire rig

The p35 and p45 difference is p45 has pci e 2.0

there are some differences like some higher end mobos support non ECC memory and some other stuff, but nothing major

P45 if you can afford it, if not get p35, there is pretty much no other option out there. unless you go i7 and get an x58.
