I'm thinking it will handle 8k video editing and 4k AAA gaming with ease

I know it's a bit overkill but I figured it's better to be future proofed.

I was thinking more like Assassin's Creed Odyssey with the extra cloudy mod.

makes sense, hopefully your psu can handle that beast....
No worries, plenty of headroom from those Samxon caps on the secondary side to power even something like the Nvidia GT630 if I really wanted to go overkill in the GPU department.

The wife had a PC (my old Phenom IIx4 gaming build with a SSD). Then she wanted a laptop so I got her a laptop and sold most of the parts of the old PC...now she misses the PC so I went bargain bin hunting at microcenter. Still I expect great things from this PC!

Could have picked up a AMD RX 550 for close to that price of the 240 (eBay) but it will be a fine little machine for your average user with those specs, maybe pick up a 120/240GB SSD as the OS drive instead of the 1TB HDD

No, it's the v3 that actually uses a Japanese main cap if I recall. I've had it running two different PCs off and on for five years.

Edit. It is a Matsushita (aka Panasonic) for the primary and Corsair found a few extra pennies in the couch cushions to spring for a few teapos on the secondary side....or they robbed the pick a penny leave a penny register tray at the local 7-11

I have two within an hours drive of me. I've visited both the past month and both are fully stocked. In fact one had so much inventory they were placing it all on the floor and made it impossible to get the cart through most of the aisles.
