I've spent a lot of time searching about these 2 models but can't find anything about temperatures or how loud it is. I have to choose one of these ASRock Radeon RX6700XT Challenger Pro OC 12GB or XFX Radeon RX 6700 XT SWFT 309 Gaming 12GB and don't know which.

I can't tell you which one would give better results, but i can tell you about my experience with XFX which helped me a lot.
I had 2 video cards that died and they were very pro with the warranty.
So from this point of view i can recommend XFX for the professional way they threat the customers.
On the other hand as an owner of many XFX cards i can assure that they are very good (for gaming or mining). (i own 5700XT, 6600 and 6600XT)
Since you choose a triple dissipation model i can assure it is a good choice for gaming (not to mention for mining)

DO NOT buy the ASRock challenger series... they are absolute trash. i had the OC Edition and at 19°C Ambient it ran (even after a repaste with kryonaut) at almost 110°C.

Take the XFX.

Sapphire but if you can't buy a Sapphire, then the ASRock.

Here is a review of another model of ASRock:

that's a problem, this is another model with better cooling system i guess

Because it has two fans?

You can always watch a video or take advices from people who have it:

Not only one person.

I can claim with the same success that xfx cards are trash. Don't buy them. Will you listen to?

Personally I buy what I think is best after reading several reviews.

That 110c figure is likely to be the hotspot which is supposedly technically fine though nearing the limit before it would start to throttle, could well be a one off problem if reviews don't show the same

Personally I think either would be a fine choice and have owned cards from both, my last was an XFX THICC II pro 5600 xt and it was great, the 6000 series do tend to run hotter but as long as you keep the hotspot Uber 110c, <100c would be better, and the core under 80c you should be fine

i have a bunch of RDNA2 Cards.
the ASRock is by far the absolute worst card i've ever had with no competition.
i won't stop you or anyone else buying one. i just warn people before i see another post in a couple days about "how to fix heavily thermal throttling 6700XT?"
my 6700XT from XFX runs 30 degrees cooler and is compared to the quite load asrock card barely audible.

This is the absolute BEST CASE after repasting with fresh kryonaut... before it was throttling by almost 300 MHz in an open case and stock powerlimit, clocks.

@Durvelle27 had a 5700 Challenger that I helped him unlock to XT and he either gave it away or Sold it because something important in his life came up. It ran fine.

I agree with my forum fellows.
Correct is "in my opinion" this card is the worst.
As i said earlier in my post i can speak only from my point of view after having the experience with all producers from AMD.
I will purchase only the next 3 producers in this order : Sapphire, XFX and AsRock.
But, also it is a matter of luck

AsRock Product Line is Challenger, Phanton Gaming, Taichi, OC Formula. I believe Taichi name was replaced by OC Formula currently.

Id take the AsRock cards over Asus, MSI and Gigabyte anyday.

At any time....most certain.
I had only trouble with those 3 producers that @eidairaman1 mentioned earlier.

Since I'm also in the market for a 6700 XT later the year if nothing else happens, I've narrowed it down to these models mainly:
https://www.techpowerup.com/review/sapphire-radeon-rx-6700-xt-nitro/
https://www.techpowerup.com/review/powercolor-rx-6700-xt-red-devil/
https://www.techpowerup.com/review/asrock-radeon-rx-6700-xt-phantom-gaming-d/

If you do get the Asrock then make sure its the Phantom gaming D with the RGB, that one had the best cooler on the 6600XT serie too.
While I can't say for sure w/o owning the cards but if those 2 are your only option then probably I would go for the XFX one.

From Asrock only the Challenger PRO and higher, Phantom and OC Formula are pretty good, Challenger Pro with 3 fans and bigger heatsink is fine. 6700 XT generally better with 3 fans cards.
