In this day and age with video cards having wide varieties of RAM on them I was just curious how people know what amount is good for them? I ask just out of curiosity, I myself play games at a fairly low resolution compared to what other play at, I use 1360x768 which is my LCD TV's native. So can anyone explain to me the knowledge I seek or point me in the direction of a site that can educate me?

The lower end graphics cards won't run higher res and settings as well as higher end graphics cards, meaning they'll not be able to take full advantage of large amounts of memory.
High end graphics card, then it needs more memory (well, runs better with more memory)
Mid range graphics card (7600, lower 78/7900 series, X16x0, X1800, lower X19x0 series, for example) will usually not be able to run higher settings as well as their high-end siblings, so 256MB is enough.
Low-end graphics card, low settings capability, 128MB may be enough, 256MB for certain games would be better, but not so completely necesarry.

It is the game developer who write the software to take advantages of big memory for keep its texture, not the graphics card.

Yeah, but if the graphics card is low-end or mid-range, it may not be able to take full advantage of higher amounts of memory.
It might be so slow compared to a high end card that it takes too long to process a texture, that to get higher FPS, it needs to have lower texture quality.
Low texture quality = low space requirement = less memory necesarry to store the texture.
That's what I meant in the first place, between all of the constrained wording and crappy logic, heheh.
