For gaming, there's really no need for i7. Since you mentioned that you'll do something else beside gaming, I would recommend this:
Ryzen 5 1600X,
MSI/ASUS/Asrock/Gigabyte B350 motherboard,
Be Quiet Shadow Rock Slim or Cryorig H5 Universal,
16 GB G.SKill or ADATA 2400 or 2666 RAM,
240-250 GB SSD (ADATA SP550, Samsung 850 Evo, Mushkin Triactor, OCZ Trion...),
1 or 2 TB Toshiba P300 HDD,
600-650W 80+ Bronze PSU (Enermax, Rosewill, EVGA, Seasonic...)
Considering coolers, Be Quiet Shadow Rock Slim is one of the quietest coolers I've seen and there's 0% risk from pump failure, fluid leaking (happened to my coo-worker on his Corsair H100i and destroyed his machine). Cryorig H5 Universal is also very good and quiet cooler. They both are very nice-looking coolers.
I wouldn't recommend 500 GB SSD, but 240 or 250 GB for the OS and some programs and 1-2 TB fast HDD for storage. Toshiba P300 is faster than WD Black, a lot faster than WD Blue/Red/Purple and faster than Seagate Baracuda/Ironwolf.
The "main" eye candy will be the case, since you and everybody else will notice that first and if you want to minimize the noise, take a look at Be Quiet Silent Base 800 Window.
