While it's an Early Access Game, it's also fully working, loads of fun, and feels like a much more expensive game.
One of the very few EAG I'd recommend. It also has a great community, and regular updates.

You could also visit Bundle Stars, and grab a bunch of bundles.
You can get a huge amount of games for <20$. Most are child friendly, plenty of variety, decently looking, and should provide for countless amounts of lost hours. This way he can also explore the different genres, and maybe find something new he likes.

OR you can get him Dark Souls, and he can become a MAN. That or he will smash his shiny new PC, and curse you till your death.

Questioning why an 11 year old needs something that powerful when all they play up until they're like 16 is Minecraft and other sh*tty block building games.

Get him Space Engineers since it's basically a pretty version of Minecraft and actually taxes higher-end hardware.

Download a benching app for the GPU, CPU. Harddrive and Ram that will also give comparable results to show the power of his new GPU and CPU and hardrive and ram......Then give him a gift certificate for a game of his choosing and then his parents are responsible for acceptableness of game choice. Now days anything with online play against others can be offensive to a child because with in the game chats can be very non child friendly. I think Race game are best choice though.

By the time I was 11 I was already basting off various body parts in video games .
But I understand the concern , I think racing games is your best bet as many suggested, something like Forza Horizon 3 , or the free Forza game on the windows store , that one has some pretty looking graphics as well.

Be forewarned if he uses the Store then it will try and take over his local account and will require the Store password to gain access to the PC. It can be undone but catches many by surprise.

He's progressing from an AMD A8-7600 APU with 8GB's of RAM and a hybrid disk to an intel 7600, GTX1070, 16GB's and an nvme SSD. Sadly, minecraft wont really show the difference, and I still owe the kid a present, so I'm looking for any age appropriate game that would showcase the amount of graphical power he now has. His parents are fairly strict, and he isn't a really big hero himself, so things like Prey, Dishonered, Crysis and Battlefield are out of the question.

Anyone know a cool game an 11yr old would like and that actually uses an engine written after 2010? No gore, no gibs!

Get a city simulation game, maybe. Totally age appropriate and the modern ones can tax your system.

Gotta say Universe Sandbox, Cities Skylines (Both more cpu than gpu), Space Engineers, Assetto/pCARS (Unfortunately these aren't really controller friendly), as well as Forza Horizon 3 and if you're lucky maybe even the PC Halo 5 forge mode (a little bit of blood in this one)
