EVGA took to CES 2019 to showcase their lineup of NVIDIA's RTX 2060 graphics card. The company showcased their three interpretations of NVIDIA's silicon, with increased performance and/or engineering across the lineup. The RTX 2060 SC is naturally the most "basic" of the three graphics cards, with a single-fan cooling solution and lower clocks than the RTX 2060 XC, which is slightly above it in EVGA's lineup.

The RTX 2060 XC, of course, takes the performance and temperature department home, with its dual fan cooling solution. It says something about manufacturers' design choices that some decided to max out their RTX 2060 with three fans, while others deemed a dual-fan setup as sufficient. Food for thought.

I just noticed this but are really all EVGA RTX 2060 cards lacking the USB-C connector?

You are correct. None of the EVGA RTX2060 has USB-C.
Plus the single fan models are triple slot? Why? Guess they were trying to fix the poor heating issues from the GTX1060 single slot.

I hate to break it @Raevenlord but the number of fans says nothing about cooling performance. Many dual fan solutions are considerably better than triple fan equivalents of the same card. Gigabyte's Windforce for example uses triple fan but its far from the best cooler. MSI's dual fan TwinFrozr eats many triple fan shrouds for breakfast - both in sound and temps.

I have EVGA's 1060 SC. There are no heating issues, the card can boost just below 2GHz and sit there all day.
Apparently for 2060 they had to increase fin density and needed taller fins. I don't particularly like it, but at the same time SLI is not supported either so the space should be available.

If you watch Jayz video on YouTube these perform just as well as the 2070 in 1440p gaming with some moderate overclocking. EVGA's cards should have no problem doing that if they don't already hit those speeds out of the box.
