I wouldnt go under 4GB for any GPU today
What country are you in?
Also the 3GB 1060 is not the same as the 6GB version, the 3GB is crippled in the GPU core itself, not just the memory.

Buy used RX 580 8GB they are cheap now, leftovers from failed cryptomining, gtx 1060 is overpriced.

RX570 4-8GB or 1060 6GB , the 3gb version of the 1060 will be a problem when running modern games at high settings.

I would opt for AMD 290(X) if you have a good enough PSU for it. And as some one else said a 580 if you get lucky or just save a little more.

1060 will be faster in games that don't go over 3gb,and at 1080p I haven't seen any reviewer mention it was a problem,but that said I'd stay aways from 3gb cards.

RX580. Its faster in the situations where it really matters the most and its VRAM makes it more capable in a wider range of use cases.
3GB was nice for 2012-2017, that time has passed.
EDIT: wait. How did we go from 570 to 580? I fell for it too. In case of the 570 though, you may find equal performance (to 1060 3GB) but still have the VRAM advantage.

In this case probably the 570, but know that it uses 50% more power than 1060, so if your PSU is a bit meh, the latter is still a better option.
