Hi,
A 1080 ti asus rog strix crashes the system (game freezes, pc unresponsive) after a few minutes if fans are not 100% in afterburner.
Windows10 latest updates, drivers etc. clean install. temps reach 72 C max. with fans maxed or set to auto. so I doubt it's a thermal issue but i'm really puzzled by this. any hints ?

A shroud cleaning and new application of Thermal compound never hurts and is a good first step.
Seems like maybe the cards VRM's are getting too hot.

How old is the card? If its under warranty still then maybe try get it sent for replacement, if you're comfortable with replacing the thermal paste then definitely give it a try.
Whats the rest of your system specification?

If you have warranty RMA it, card is dying.

That is quite a deduction when you havent even heard the rest of the circumstances resulting in the GPU overheating/PC freezing up when gaming.

Maybe the OP put it in an extremely compact case with absolutely no airflow. It could even a possible PSU issue. We wont know until we have more information so we can draw up a better picture of what could be going wrong.

Agreed, that's why shit is so expensive. I see people returning shit because they fucked it up or have zero clue what they are doing. We really need to know more info.

Is the case dusty? Is the card fans dusty? Does the card fans spin at all not at 100%? Does the fan speeds increase as you play a game? what case you using? How many case fans you have? How hot is your room? Did this suddenly started happening?

Unfortunately my spidey senses are tingling and its telling me you have received a card that has been cryptomined to death.

When did you buy it and how long have you had it? Has it always froze like this? If youve had it less than 1 week, you should still be able to send the card back or claim for a refund.

Upload a picture of the card if you can. Maybe the previous owner swapped out the cooler for an inferior one because the cooler on the strixx cards should honestly be very good or at least more than adequate for cooling a 1080TI.

Yeah EBAY LOLZ!
Why would you buy a high end card and NOT run the fan on High while gaming? Might make sure the bios is the correct one, you maybe able to register it at Asus for a warranty but most likely as already stated you bought a card used to mine with. The ROG name does carry a warranty.

1. What does event viewer say ? Load w/ OC should be at 70C ... throttling doesn't occur till 82C. Can you read VRM Temps ?

https://www.techpowerup.com/reviews/ASUS/GTX_1080_Ti_Strix_OC/33.html

2. Running "outta the box" or w/ manual OC ?

3. What happens if MSI AB isn't loaded ?
