BUDGET - 800 EUR, I'll buy some of the parts on Amazon.DE, some of it locally due to price difference/availability. This of course doesn't include possible GPU upgrade down the line
PURPOSE OF THE BUILD - gaming, don't care about streaming, productivity, etc

So far I came up with this:

Things I'm not certain of:
CPU - 3600 or wait for 3600X. Would 3.8/4.4 make a difference?

CPU cooler - I've picked H5 due to the fact that it's a 140mm fan, if anyone has better options feel free to suggest one

PSU - my current one (XFX Core 550W) has no issues running the old build. However, I've been using it at least 5 years and I do worry about it aging, plus modular cables help with cleaning up the build

SSD - I've picked 2.5" SATA, don't think I'll see any difference in going with NVMe considering pure gaming workload. Feel free to suggest a different model, I've basically done no research on performance when it comes to regular SATA drives. Alternatively I can go with a 500-512 GB one, since I don't tend to keep 20 games installed at once and have regular HDD for media.

GPU - since I'm still using 1920x1200 display which is 60 Hz I think I'll stick to 1060 6GB for now, although I might upgrade to a new display and a 5700 XT in September or later down the line and then get a 1440p display

Intake fans for the case - go with 2x140mm or 3x120mm? I'm considering these as a 120mm option:
Noctua's A14 PWM as a 140mm alternative. Other options?
Or simply go with 2 x A14 PWM on the front and Scythe 120 mm in the back?

OC - I'll probably stick to PBO, since Ryzen's are pretty much maxed out by default

If you are willing to OC , and I'm sure you are, then I highly doubt you see any difference between the two CPUs without using synthetic benchmarks.

Little update:
- switching the case to PM01 RGB - it has tempered glass, 3 front 120mm fans, 1 140mm rear fan and comes at 125€ on sale, overall ends up being cheaper considering the cost of additional fans and offers more space for GPU than Meshify C
- debating between 3600 and 3700X - I can shell out cash for 3700X and consider it as sort of future proofing for nextgen titles just in case but it does come at over 140 € extra. This is still with gaming in mind. Opinions? At that point it's also comes down to Wraith Prism that comes stock with 3700X vs Cryorig H7.

Definitely pick the 3600 over the X. However, 3700X is a worthwhile upgrade I think. I don't think either requires an aftermarket cooler, although the stock 3600 is a bit noisy. The 3700X stock cooler is very good. Other than that looks pretty solid and your plan sounds reasonable.

Benchmark Scores 3050 scores good 15-20% lower than average, despite ASUS's claims that it has uber cooling.

Next gen consoles will use 8 core Ryzen, it makes sense to at leach match that.

Ryzen "based" were the exact words. Console CPU's typically pull around 25w including the "AMD 8-core CPU with x86 based architecture" used in the current PS4 Pro and Xbox One X (who names these things?). Consoles have been multi-threaded for while, remember the tri-core IBM CPU in the xbox 360.

Any modern six core (i5-8400, ryzen 1600) or eight thread CPU (i7-6700) should match next gen CPU power at launch and the initial life span of the consoles. Down the road as console developers become more efficient then CPU power will become more demanding as in any other modern console generation.

Here is Your PSU Specs, that series has been around since 2010. How many years have you had yours?

Seasonics are pretty sturdy.

Trying to future proof pc builds has a tendency to backfire. You often end up spending more than you would if you just replaced parts when necessary. 3700X costs nearly twice as much as 3600 while not offering much more for gaming performance, and in a year its price might drop in half just like it happened with 2700.
Right now the most sensible amd cpus for gaming are 3600 and 2600 (the latter is awesome for cheap builds, I'm considering buying it).

It's almost 6 or 7 years now I believe.

Do a PSU calculator test for the upgrade parts and I mean everything, even the OC to max and then see what it says, 528W on the 12V line is what you need to watch for since 3.3 and 5V arent really used but are for compatibility for machines back in Mid and early 2000s or older. If it breaks 528W suggested I would upgrade even though Seasonics are underrated from their max output to begin with, IE my 1250W tops at 1350 IIRC.

With a 2070 Super level card it's 522 W Total with 443 W on 12 V line, according to Outervision PSU calculator.

Jaguar in PS4/Xbone was the first time consoles getting MASSIVE number of cores (no, cell's vector crap doesn't matter) which lead to companies being FORCED to multi-thread (e.g. Blizzard went with optimizing for 6 cores for Overwatch, later both Sony and MS dropped number of cores reserved to the system down to 1 from 2).

Any modern six core (i5-8400, ryzen 1600) or eight thread CPU (i7-6700) should match next gen CPU power at launch and the initial life span of the consoles.
Yes, but nope.
For starters, what is expected is eight 3.2Ghz Zen 2 cores, which already sets the bar quite high.
Next, console gamers are quite fine with 30fps, very rarely we see 60fps, now it is also expected to run at 4k, so CPU load will be rather modest, while people aiming to 60+ fps on PC might get into CPU bottleneck trouble.
