48GB of RAM, keep or remove some?

Hi all,
I just received an old workstation with Xeon processor (HP z620, Xeon E5-1620, one CPU) and 48GB of RAM. I am planning to build a gaming machine by buying a fast graphic card.
The question is whether to keep all the RAM or remove some and keep just 16GB? I read that even the most demanding games will only benefit from 16GB of RAM.

You should look up the motherboard. That platform might run with 6 dims and you would cripple it if thats the case. Dual channel on desktops cpus is because of the nature of the platform

id keep it, better to have too much and not need it .
