That doesn't fully answer his question but I see its in your signature.
What 5700XT is it specifically though and which temps are you talking about ? The core/edge temperature or the junction temperature?
The junction temperature will generally be higher than the core temperature and the junction temperature hitting 80C is "fine"

Then you probably have a way to monitor GPU load. You're running the game unlocked at max settings so you're probably stressing it to 100% load. Of course you're going to run into very high temps. So yeah, seeing 80C is normal in this scenario.
PS.
There are multiple variants of 5700xt from various vendors, all with different coolers, which means different temps. Saying "5700xt" without giving the exact model isn't helping.

80c for cpu's is pretty common for most stock cooling and stock fan profiles. Fan curve wise is kinda what ever you are willing to accept with fan noise.
