After market heatsinks, or leave stock?

I won't be doing any overclocking, gaming, streaming, mining, or any other intensive operations.

Everything is in a large tower case with a fan at the front and another at the rear.
The GFX card also has two fans so pushes air around.

The room doesn't really get any sun so is typically cooler than the rest of the house - it's around 19C right now.

So, will the stock heatsinks on a Gigabyte B550 Aorus Elite AX V2 MOBO with Samsung 970 EVO NVMe 500GB SSD, and AMD Ryzen 5 3600 CPU be adequate?

Or should I get some anyway just to extend the life?

I'd get a better cooler since the Wraith cooler that comes with the 3600 is pretty terrible, IMO. It gets the job done, but only just barely.

R5 3600 is coming with AMD's "Wraith Stealth"... You can’t really see it under the fan
It will work, but considering the size of it and the fact that the case has only 1intake+1exhaust fans I would expect the CPU temp to climb to 80~85°C under intensive load. The 3000series temp limit is 95°C but still I would get a better HSF to keep it under 80°C at least. Also, you should consider adding fans to the case.

I have plenty of other case fans I could use ... I have accumulated tons of spare parts over the years.

What about the onboard SSD?
Do they typically get too hot for the built in heatsink on the mobo to deal with?

I hate to say it but I would also not use the stock heatsink. Your last system lasted 10 years because you kept it cool. Maybe research to see if you old cooler has AM4 backplate?

I'll check but I don't think my old Noctua is compatible.

Not even sure what version it is.

If I can identify it I may be able to get an AM4 mounting kit.

I have a Gigabyte X570 AorusPro and has the exact same SSD heatsinks on the same places. I use the first one under CPU socket. It does not get affected by GPU heat much but it could by CPU heatsink. Thats why case air flow is important. I also use AIO water cooler for CPU and there is no heat from CPU to the SSD. I do use a fan to blow air around CPU socket though and that helps with SSD temp.
My NVMe is a 970Pro 512GB and typically is around 35~40°C, except some very rear times is reaching 45°C. And thats for the NAND chips. The controller of the drive stays higher around +10~15°C. You dont want the NAND to be above 45~50°C and controller above 60~65°C as the drive will throttle it's speed to keep temp under check and to protect it self.

You can try the drive with the board heatsink and if the temp is not good, try to increase case airflow around the socket and/or maybe add some small heatsink over the board heatsink.
Like the ones below. Just make sure that the board SSD heatsink is actually touching firmly the drive.

I wouldn't agree with that video. I've built a few R5 3600 computers using the Wraith Stealth that came with it and it wasn't that bad. I did turn the fan profile up on the motherboard though. But the temps he is seeing make me think he has a bad mount on the CPU cooler not necessarily that the cooler is that bad. But with a better cooler being so cheap these days, I don't see a reason to stick with the cooler that comes with the 3600.

Well after a search I found that Noctua are shipping AMD mounting kits for their coolers for free.

I just submitted the form so let's see what happens.

I’m big on proper cooling. Obsessive even, but I’m going to go against the grain here. If you can’t get the Noctua kit for some reason and since you are not going to be doing anything to heat up the cpu a ton, just buy some better thermal paste like Noctua NT-H1 or H2 or Arctic MX-4 etc. Clean off the junk that came on stock cooler with alcohol and apply the new paste. If you then reseat the cooler properly, you’ll see an instant drop of 3-5 degrees. That will be be fine for a 3600 that’s not going to see much work. If temps still creep up, you can do an undervolt/offset which is safe and easy and will bring temps down even more.

That all being said, if you find that things change and you do start gaming or doing other cpu heavy tasks then by all means, get a better cooler.

I received the (free) conversion kit from Noctua - thanks Noctua!

The old thermal paste I have is about 10-15 years old so I had to apply a little acetone and massage it to get it pliable.

After replacing the stock cooler and fan with the Noctua, the temp dropped around 3-5C.
I changed the CPU fan profile to silent and even then it still runs cooler plus has the added bonus of being a lot quieter (fan runs about 1/3rd the speed) and as it's a lot bigger, it moves more air and isn't as whiney.

I've had HWMonitor running for a couple of hours this morning and temps seem good.

These are the temps under load - converting an 8GB video file using VLC:
