Saw this youtube clip today and afterwards looked at a few B560 boards to see what the deal was. It looks to me like the cheaper B560 boards don't support 3200MHz RAM or am I reading it wrong?

Here's a few examples.

Cheap Asus & Asrock B560 boards.

https://www.asus.com/us/Motherboards-Components/Motherboards/All-series/PRIME-B560-PLUS/techspec/
* 11th Gen Intel Core™ processors support 2933/2800/2666/2400/2133 natively.

https://www.asrock.com/MB/Intel/B560 Pro4/index.asp#Specification
*11th Gen Intel Core (i9/i7/i5) support DDR4 up to 2933; Core (i3), Pentium and Celeron support DDR4 up to 2666.

Yet I see this on the few higher end (more expensive) B560 boards I checked out.

Yeah, reading it wrong.
The first example, the Asus Prime: 4 x DIMM, Max. 128GB,DDR4 4600(OC)/4400(OC)/4266(OC)/4000(OC)/3733(OC)/3600(OC)/3466(OC)/3333(OC)/3200(OC)

It shouldn't say OC next to the 3200.
