And the amazing thing is that it's still being done today! Great gift from out ancestors that we should toast to (well not right now for me, last night was enough). Had a few locally brewed beers with some friends last night, amazing stuff. Best part is the jokes on the bottles, sadly they don't translate well to English.

And eventually through trial and error, people found things that worked and benefited them without every needing to know WHY it worked... superstition and religion covered that, by being strict AF with to prevent even minor changes to recipes ruining the whole damn thing.

OP might want to change the title from "bread" to "agriculture", or "cultivation of wheat". Whichever suits.

You should read the article, or learn history at least. It is the least you could do for not stirring debate which I'm actually quite literate about.

That was true for middle ages, times before then like the article is referring to not necessarily. Humans wouldn't have been living in large enough concentrations to affect water quality.

I second that, I mean sure I can drink beer every now and then but wine is my choice if I have the option.
