Looking to downsize from my triple monitor setup to clear some space and make things a little simpler. Plus my monitors are pretty dated so long overdue for an upgrade. So I’ve been looking at a few different monitors but can’t seem to decide on resolution and feature set like HDR and FreeSync. Monitor size will be 27”-32” about a couple feet away.

I would say 1080p-4k would work well for your situation, sometimes my 22" monitor takes up my field of view
If you want good HDR consider getting a TV instead of a monitor

1440 27". 4k 32" would be nice, but the refresh rates suck and they're not cheap.

I would think long and hard before you commit to this. A single monitor, regardless how big it is, just isn't the same as having multiple monitors. I have 2 x 24" monitors on this setup and whenever I set down at another computer that has single 32", it drives me crazy.

If you need the space, I say look at getting a triple monitor stand, or a wall mount setup to free up some desk space.

From my own experience 30" 2560x1600 and 24" 1920x1200 best at productivity, next step 43" 4k just because it have same ppi, small enough to not to be seen by eye, but not too small to have troubles with bad interface scaling. As for gaming, i don't care about more than 60FPS and use V-sync to reduce unnecessary heat.

For productivity - dual/triple monitor all the way. Regardless of resolution. Vertical resolution rules, 2560x1600 and 1920x1200 are excellent but pretty much extinct by now.
For gaming, 1440p is the sweet spot right now where monitor prices are not too unreasonable with not too expensive GPUs being able to run games.

27" @ 4k is too small for productivity, imo. Even on a 32" screen, 4k is still quite small. But on that size you can have a lot of functional windows open at once. Otherwise, 2560*1440 is good for a mix of productivity and gaming.
HDR is a gimmick for now, with too few (especially AMD based) options offering less than stellar luminance contrast. The best ones are exceptionally expensive and fly with Gsync but do have closer to TV spec HDR.
At palatable budgets, it's a choice between good gaming refresh rates (sub 4k panel) and fixed 60hz refresh on 4k.
I have to admit, I argued it was better to have 4k at 60hz but that monitor is now back in it's box and I'm using a 165hz 2560*1440 monitor. For multiplayer it is better. But text is not as crisp.

Compromise, compromise!

I don’t see this Resolution very often. Nor have I seen many offerings for it.
In the Olden Dayes it was more common.

Dual (or more) monitors fo sho, even if they have different resolutions.

Did you change the scaling or font. My text using 3x 1080p monitors is still very readable

I miss 16:10, the decline started when BR/HD-DVD were release and not having black bars on the top and bottom of the screens was being hyped up, but anyway I'd recommend anything 16:10, so 1920 × 1200 or 2560 x 1600. You still can find some 24-27" 1920 x 1200 at reasonable prices.
