How can I prevent Steam from updating game?

So I have New Vegas on Steam, and discovered that the sudden cause of the game locking at 0-5 fps while in VATS was the latest patch. So I removed the patch (it's simple in Win 7 - just right click on its exe file in Steamapps directory, see the previous version and copy it in the directory instead of the more recent exe file).

Thing is I instructed Steam not to update the game (games library - rightclick on Vegas - Properties - Updates) but occasionally (not every time) when I restart the pc and go quickly to check I find out that the setting I instructed was not saved and that the game was set once more to "always keep this game up to date" :confused:

Which is confusing.
What can I do to make Steam remember the instructions not to update Fallout New Vegas?

Anyway, I did some research on the Steam forums and it seems that this is a common issue, that the setting to not update will fail to save.

if that dosent work then you could launch steam in offline mode? you will loose communication with friends :(

Exactly. And I want Steam to be online for the achievements and the rest of the silly stuff.
