I would take an ECS MoBo before an Intel MoBo, but thats just me 
If you have a friend with a SB CPU you can ask him to use it for the flash if you want to stick with your original plan? By the time you actually start putting this rig together Haswell may be here, if that interests you i don't know?
Absolute max temp for 3570k is 105c then it starts to throttle. 90c - 95c seems like the top end LOAD temp (OC) on air, with water you can get it down into the 60s/70s. Depends on the WC kit of course....
