I'm thinking about getting a phenom 2 1100t but have a question?

it is the last cpu that my mobo can take with a bios update. my question is i have 2 evga gtx 285 vid cards will this cause a bottle neck with the cpu and will it cause problems in rift?

you're already bottlenecked, so its going to be faster.

just plan to OC, especially the northbridge - get it to at least 2.6GHz.

do you mean the northbridge is bottlenecked if so i don't know how to overclocke that?

Just like CPU core ratio, CPU-NB multiplier is upwards unlocked as well on that chip. Just need to change a few values and a voltage in BIOS.
