Not only desktop processors will be dual core. Even high end server processors will be dual core soon, Intel and HP have demonstrated the dual core Montecito at the ISC2005.
The samples shown ran only at 1.6Ghz though the final samples will look a lot better compared to the old Madison:
-They will be produced at 0.09µ
-Have an increased FSB of 667MHz (was 400)
-256K data cache and 1Mb instruction cache per core
    -24Mb L3 cache total
    -Go past the 2Ghz barrier
And not only do all these specs improve, powerconsumption will go down to 100Watt (at 2Ghz) making the Itanium nearly 20% friendlier to the powercompany. (compared to 1.6Ghz Madison)
At lower clockspeeds the chip uses even less power, the shown samples for example use ~57Watt at 1.6Ghz. At 1.2Ghz powerconsumption would even go down to 24Watt, this makes the new Itanium perfect for bladeservers. Or ofcourse... Itanium laptops :)
