I'm looking for a mobo in the $0-75 range and most only have 2 ram slots. Is this enough?

Very likely it is but it depends what you're trying to do. With two slots you can do 2x4GB (8GB dual-channel) which is plenty of RAM for any games and enough for some virtualization, CAD and photoshop.

I was going to get 2x2gb, and if I do I don't want to waste ram and needing to spend more money by getting a 8 gig kit when I could get another 4 gig kit+ I don't really don't want to skimp on the mobo I want it to last a while

Most laptops these days come with 2x2GB (4GB dual-channel) of RAM and it's plenty for the average user. 2x4GB is actually cheaper per gigabyte, so if you need more RAM it's still possible to skimp on the mobo a bit.

Only you know if you need more RAM.

Also I find your avatar highly arousing. :D

I definitely like the second (the Foxconn one) more than the first but it gets some pretty bad reviews. Despite your budget I'd still be looking for the 800 series chipset.

Does it need to be mATX?.

EDIT: This is the best I can find, BIOSTAR A870 $59.99 + s/h (CAD):
http://www.newegg.ca/Product/Product.aspx?Item=N82E16813138324
+It has 6 x SATA 6.0Gb/s and supports RAID 0/1/5/10
+It has 2 full sized PCIe 16x slots though one is only 4x wired
+It has 4x DDR3 1600 (OC) slots
+It's cheap
-The CPU VRM is tiny and doesn't have a heatsink so this isn't an OCers board
-24-pin ATX connector is in a god awful spot
-No onboard video
-Onboard audio sucks
-No rear SPDIF (though it does have an internal header)
