After a lot of debating I've decided to go with X48 chipset instead of P45.
Overclockability (is that word?) Is still important to me however and i'm looking to push FSB's of 500Mhz min. The two boards I'm looking at are the:
Foxconn BlackOps: http://www.newegg.com/Product/Product.aspx?Item=N82E16813186144
and
Asus Rampage Extreme.

Do you think they are both able to hit 500Mhz FSB?
I'm leaning towards Foxconn (I've always wanted to go Foxconn), but I hear the Rampage Extreme is a better OC'er. Any thoughts?

With a 45nm dual-core chip, you should have no problems hitting 500fsb with the Rampage. With a quad-core things can get a little tricky trying to get above.. say 475fsb.

Really? Sweet. It's going to be dual core (E8600).
How about the Foxconn?

I had the same decision, and went with the DFI X48 board because it was cheaper and had all the better options.
hope that expanded some thought processes

Interesting.
Still unsure, any other input would be appreciated.
Also both have Watercooling available on the NB. I'm already planning on WC my OC'd E8600 and 4870x2 (when they make a block for it). Will the NB be a big restriction on flow?

If you're planning on placing it in the same loop, it could well be.
however, friends of mine have split their loops, placing NB/RAM on one and CPU/GFX on the other, which can work quite well if executed correctly..

Im using an Iwaki MD30-RZ High pressure Japan pump, IYO do you think I have enough flow to run it in one loop?
I wouldn't know how to do 2. Does that mean 2 pumps ? 2 rez's? or just 2 completetly separate WC systems? (Pump Rez and Rad)

you could probably try it and see, Iwaki are good
my friends were using Swiftech pumps, though good for simple running, not quite Iwaki standard

Imma bench an E8600 w. a blackops/rampage xtreme and see how it goes!
