I could guess you are covering the motherboard for a cleaner picture, but why is that necessary?
Just looks nicer. Got a TUF board from ASUS in the meantime. First I thought it would help to avoid hot spots that draw the FLIR's attention, but I figured out how to adjust the "targeting" rectangle, to limit the area that is evaluated for the temperature cursor.
