I would go for the dual, a quad in a laptop is just pointless overkill and not many games utilize the quad yet, the only one i can think of off the top of my head is supreme commander.
If your going to make a gaming laptop, you may as well just make a gaming desktop, the laptop is going to have to be plugged into the wall all the time just to make the thing turn on anyway. My advice is to scrap the laptop idea and just go for an easily transportable desktop. It may even save you money.
