So yeah i think its time :) i haven't upgraded in a while so here we go..

Intel Q6600 (already have)

Desktop DDR3 Ram 2GB Kit (2x 1024MB) PC8500 - $154
http://itestate.com.au/products_detail.asp?code=PD00004810

2 x Hightech ATI HD4850 PCI-E 2.0 512MB - $221.19 each

2 x 3.5" HDD SATA-300 500GB 32MB Seagate - $99 each

=$1091.00 AUD, what do you guys think? Don't really want to spend more than $1100, also keep in mind that we pay more for computer hardware here in aussie land.

i'll also just be using my current case, dvd drive and power supply :)

I think you may need a more powerful PSU! With that motherboard only one video card will run at x16 pci-e speeds while the other is limited to x4. For a crossfire system you may want to look into a x48 chipset motherboard.
