Portable Budget Build

So, I am heavily considering building a small portable gaming PC. I'm going to cut down heavily on pricing by swapping my graphics card and PSU from my main rig in and out with the portable one, and using some spare RAM I have in the build.
So here is what I have so far: (Prices are from http://www.freecom-computer.com/ and http://buymore.hk/shop/ , a fair amount of chinese on the pages but easy enough to navigate without knowledge of chinese.)
All prices in Hong Kong Dollars (~7.8 HKD= 1USD) (I am trying to keep the entire thing to under 3500 HKD at most.)

Chassis: Cooler Master N200 (355)
CPU: Intel Core i3 3220 (899)
Mobo: AsRock B75M-DGS (440)
HDD: WD Caviar Blue 500 GB 7200 RPM (375)
OS: Microsoft Windows 8 64-Bit OEM (999)
GPU: Sapphire 7970 GHz Edition (Swap in swap out, free)
PSU: Corsair HX 750W (Swap in swap out, free)
RAM: Corsair XMS 3 8GB (2x4 GB 1600MHz, free)

I intend to carry this around and play TF2 (ideally record it too), Bioshock Infinite, and Borderlands 2 on maximum settings. What I want to know is- Will the 3220 bottleneck the 7970 by a noticeable amount? Ideally, I would like 40+FPS on all of these games, maxed out at 1080p.

at that resolution cpu doesn't play much role.

So I could cut down to a top-rate pentium and still be capable of getting easily playable frames?

I recommend an i3 or A8, as i would guess you dont just want to play games singularly, I'm sure you'll want some kind of snappiness, even I use winRAR a huge amount and I'm constantly unpacking files, so my old 8350 was a dream for me.
But yes, the top end pentium would make easily playable frame rates.

K series are unlocked, I recommend a better motherboard (A85X) if you're thinking of overclocking, even a cheap one will do, as long as it has heatsinks on the VRM's around the cpu socket. MSI FM2-A85XMA-E35 would do nicely. Yes you could overclock it fairly well, with a good enough custom cooler. Stock cooler is fine for stock usage, anything more, and it will need replacing. The Coolermaster Hyper212 EVO is a good choice.
Yes, the RAM will work.

As long as you have half decent airflow in the case (suck in one end, exhaust out the other), then yes.

I would recommend sticking with the Intel i3-3220, it's a great CPU for the price.

I would suggest the stock 125w AMD heatpipe cooler rather than the stock cooler that comes with that cpu, especially if you're going to overclock.

I run the AMD heatpipe on an overclocked 95w 1045T in one of my rigs and have no issues with temps on it. They come with every boxed 125w cpu so locating one for sale shouldn't too hard.

Also if you can get the prototype one sent with certain RMA's (slightly larger in total size by about 1cm^3) that will cool ever so slightly better. I did have one, but gave it away to cool an old AM3 chip better than stock.
