The more data you can afford to have on SSDs,the better. Best case scanarios is using HDDs for a backup copy of your SSDs only. having SSD as boot drive is nice, a restart takes just a few seconds and then you're back to desktop again. But having all your programs,games and data on either one big SSD or a few small ones is just great. Instant and quiet no matter how many thing you're doing at the same time,very appreciated when using a multiple monitor setup. I don't think I was ever able to really see the execution of any application slow down since I moved my software to SSDs and kept HDDs for backup only, no matter how many things I did at the same time. 512+1TB is a very nice setup, and one you should definitely stay on.
For my personal use I'd take a 1TB SSD over a HDD of any size.
