I'll start off...
To make a remote controlled media center PC, use WinAMP and BrowseAMP. You can then go http://<yourmediacentersname>/, and you will have a neat interface to control it over HTTP. Look at the eXtended skin. You can control fullscreen, playlists, browse to open new files, ect.
You can also make new skins.

You can use LCDsmartie, PalmOrb and an old Palm pilot to show system stats on the palm pilot.

If you want to stream music via UPnP (You can stream to Vista too!) for free, you can use TVersity
