In a game like Indiana Jones the difference between a cut down 8GB part and a cut down 12GB part is going to be the difference between a 60+ fps result and a result in the 30 fps range.

It does not need to use 12GB to be of benefit. Once you are using 8.5GB you will see and feel the benefit of more VRAM and frequently titles at 1080p are using over 8GB and there are more on the horizon.
The TPU database is at 4K so you should probably us the +21% vs the GRE as that was also at 4K rather than mixing and matching 1440p and 4K data.
As for the calculation it should be as follows.
7800XT = 100
7900GRE = 110
9070 = 110 * 1.21 = 133
So 33% more performance for 10% more money...

9070 may equal the 7900XT give or take but I suspect the 5070 does not even match the 4070S let alone the 4070Ti.
The 9060XT has too little bandwidth to match the 7800XT so I see it closer to the 7700XT / 4070

N48 has good yields so rather than binning perfectly good dies as a 9070 AMD are just making sure there is supply of 9070XT and that means using the 9070 as an upsell product. As more production ramps and they get more faulty dies the 9070 price can drop down a bit.
If the $599 / $549 is true then clearly N48 has great yields and AMD don't want to supply many 9070's so are pricing it to upsell to the 9070 XT. Also means they can supply more 9070 XTs rather than splitting the same volume of chips across 2 products.

1%lows show the 16GB model gives a 60fps + experience at all time where as the 8GB model dips below the 60 fps mark.
It may not happen in every game but it happens in a lot of newer titles and it is only going to get worse as time goes on. As others have also said this also does not show...
They removed the GPU bound titles to show the average uplift in the full suite and the average uplift when CPU bound.

In fairness RT is demanding on both CPU and GPU so running at 720p DLSS P with RT on can still alleviate a GPU bottleneck while also ensuring that the CPU is being stressed by having the CPU demanding settings enabled.
