I think the smartest thing to do would be to wait for IB lga 1155 or lga 2011 SB-E

Sorry to repeat myself, but I think I wasn't heard the first time. Especially for your budget, IB/SB-E will be much better

Just jumping into this convo as I'm in the decision-making market right now also for a mobo, and having trouble distinguishing/deciding between P67 & Z68.
I plan to run an i5 LGA1155 until ivy-bridge LGA1155 come out in Q2 2012 and swapping out proc then. 16GB RAM, 2x gtx 560ti in SLI (Performs better for same price as gtx 580), 2x OCZ Vertex 3 120GB RAID 0 Boot drive w/ 2TB 7200RPM storage. I definitely plan to OC both CPU & GPUs.
Recommendations for this configuration? What are the advantages/disadvantages of each?

The z68 overclocks fine and if anything it may offer higher used resale value. For what it's worth I got out of SLI/CF rigs because a single card performed much better in some games. Sometimes new drivers fix it but by the time they do I could have bought a single card for less that's faster.
