I recently got an ACER DM431k monitor (4k HDR)
its a cheap one that I use for office work (multi monitor setup)

I got it hooked up to my gaming PC (rtx 2080 ti)

WHEN I use HDMI, in nvidia control panel I cannot set the monitor to anything higher than 8 bit color depth (but I can activate HDR capabilities within windows and in the monitor menus)
WHEN I use a Display Port Cable, I can set the Color depth to 10 bit instead of 8 bit, but no HDR capabilities.
I'm pretty such HDR is limited to using an HDMI connection.
My question is:

If I intend to use this setup for office work, photo editing, Charts analysis, is it better for me to use a display port with the higher bit color depth? or am I better off with HDR and HDMI?

It could be something simple like your DP cable. HDMI is limited vs DP for giving high refresh rates at higher resolutions. I have a monitor that supports 165hz with DP and 144 HZ with HDMI. Having said that the color depth should give you better colour representation. What I would do is load a Hubble Galaxy screensaver at your resolution and save it as your desktop. Apply the different settings and you should get a good idea of which one you prefer.

I say try it and see which one you like better. They are your eyes, after all.

That said, I would try different cables of each type. They are not all created equal. Higher quality (not necessarily the most expensive) cables yield the best results.

Also, Don't forget much depends on the print-outs. If the printer and monitor are not properly calibrated to each other and to the proper color profile, and your work depends on the printed page, it really does not matter what you see on the monitor. You will never get an accurate color printout.

This is most likely a limitation of your monitor. Keep in mind that not all monitors can do 10-bit and HDR together.
Acer's manual provides zero information about anything related to HDR beyond how to turn it on in the menu.
That said, considering it's a 250 cd/m² monitor, you're not looking at real HDR here, as the screen isn't bright enough and there's no real local dimming.

10-bit would be better for your work, so stick with the DP input. HDR is only really useful for some movies or games.

That's because HDMI doesn't support as much bandwidth as DP until you get to HDMI 2.1.
