So I have the MX Keys and just today after like a 2 years or so of owning it I have noticed that it is not responsive quite a bit. Its almost like the bluetooth drops and it has to connect again before letting me type. It happens randomly, but its normally after I stopped touching the keyboard for a few seconds and then I have to hit some keys and 2-5 seconds later it is working again until I stop typing.

1) I have "forgot this device" and then reconnected .... this did not help
2) I am not using the USB dongle, because I am on bluetooth and my USB ports are full right now. Was thinking this might be a needed step to try? However, if the bluetooth is going bad, I will be really annoyed.

Is there anything else I should try to correct this or is the keyboard dying a slow death now after only 2 years?

If it matters, I am on Mac OS with this keyboard.

You should try the dongle. We can then isolate the problem by eliminating other factors. If the dongle is fine, something is wrong with bluetooth, either on your mac or on the keyboard. If the dongle also exhibits the same problem, the keyboard itself is the problem.
Also try updating the firmware to the latest one if u haven't done so. Maybe apple updated Mac OS and did something to their bluetooth stack that may have been fixed by a logitech firmware update. Maybe its just a bug in the firmware that an update mightve fixed it.

and maybe try to replicate the issue on another system, maybe a windows system, also on bluetooth. If you don't have another system, try to replicate it on your phone or tablet if you have those. thats another way to isolate the problem.
