Can I Block/Select Specific Updates in Windows 10 Pro?

Been a while since I've posted here! Last year, I intercepted about 2 dozen Dell Laptops slated for recycling. The majority were Precision M6800's in great shape, almost all had either NV or AMD discreet work station graphics. I've since slapped SSD's in and sold most of them. Off-tangent here, but the majority of the Win 10 installs self-activated (they had Win 7 OEM keyed into the BIOS, I guess).

So I have this one Dell Precision M2800 that I plan to connect to a vintage receiver as my audio source to play MP3's and YouTube videos. This unit has integrated graphics (i7-4710MQ CPU) AND a 2GB AMD FirePro W4170M discreet graphics card. The problem is, when I install any AMD graphic driver, either from AMD, DELL, or through windows update, the system will blue screen on startup. Otherwise, the laptop works great. Have the latest BIOS. I checked the BIOS thoroughly to see if there's a way to disable the AMD FirePro with no luck.

So, is there any way to prevent windows update from installing the AMD graphics drivers? Not being a system admin or IT type, I've never researched this, or had a need to do anything like that. I'd still like all other updates and windows virus protection. And I really don't want to rip the laptop apart and remove the graphics card.
