Just as title says, What happens if I do not connect my ARGB header and leave it unplugged? Will the fans have a default lighting mode or just not light up at all?

The LEDs are a separate circuit not powered by the fan header. So without completing the circuit (by connecting the ARGB header) nothing would happen; it wouldn't light up.

ARGB items have no power and lighting if they arent connected to a controller.

I agree that they will not light up at all. But I note this is something you can just try for yourself and see. Unplug them and see. If they don't light up, no big deal. The distraction is gone. If they are in some way tied to the fans, just make sure the fans are still spinning.
