I used to use two Samsung Spinpoint 500Gb HDDs in RAID 0 on my MSI 790FX-GD70 motherboard.

I'm parting and selling my computer, and was wondering if I were to sell both my HDDs to a guy, can he easily recover my data (I haven't formatted the disks)?

I don't have anything sensitive on my HDDs and I'm not worried that he'll use some complex programs to extract my data. I just don't want him to plug it in and see all my data.

As far as I know, the RAID array I was using cannot be recreated on another controller without formatting the disks, but I might be wrong.

Just use a Hirens BCD and do a 1 pass zeros not only will it erase everything the average person could recover.
You will also be sure the drives are 100% good 2 go.

For the record nowadays nothing is out of the realm of possibility as far as data recovery unless you physically damage the platters.
