Alt-tab is for choosing between running programs. If you don't want something there, just make sure it's not running (i.e. close it).
I leave it in the background but when I perform an action with it it comes back to the foreground

Because it is still running. You have to close it if you want it gone, not just put it in the background.
I need it to work in the background but not appear in the foreground

Well, as I said, alt+tab is for choosing among running applications, foreground or background. You can't hide and unhide things in it as you please, I'm afraid.
So I wanted a way to hide all the previews from alt+tab like I saw to hide the previews from the taskbar

After a quick search, I see it can't be done without third-party apps. I might be wrong, though.

"Minimize to tray" is probably close to what you're looking for. Few programs have this feature built in. Two examples are Microsoft Outlook and Winamp. For others, you need a third-party utility such as one of these:
