Gaming PC for new GPU's

Hello everyone,
I was planning on building a PC without the graphics card while waiting for the new GPU's to arrive and wanted to ask if there's a reason not to?
Don't really need a PC for specifically gaming right now but a new one for regular browsing and office work would come in handy (using an old laptop right now)
Build would look something like this - mainly for Singleplayer Games like Silent Hill 2, Cyberpunk 2077, God of War in 1440/4k
Budget around 700-800€ without the GPU

(8800XT/RTX5070)
Asrock B650 PG Lightning
Ryzen 5 7600
32GB DDR5-6000 CL30 RAM
WD BLUE SN580 1TB
Montech Air Base 903 Max
Corsair RM750e
Arctic Freezer 36

If building it isn't an issue would i be able to play older games like Mafia 2, Bioshock and so on with the 7600 iGPU?

(based in germany if that matters)
